Paul and Franchesca Sellas started their culinary journey with the creation of Rebel Kitchen. At the start, they hosted various pop up dinners around Knoxville setting up extraordinary dishes at Central Collective and the like to showcase a unique take on food preparations, tastes and presentations.
The duo quickly gained a loyal following and from there opened the brick and mortor located in the Old City next to The Old City Wine Bar. Wanting to further explore their roots and creativity they set out to expand their growth with the creation of Table Forty9. A homage to Chef Paul’s mom and reminiscent of the kitchen that set his whole career in motion, TableForty9 is an exploration of culinary excellence.
Paul is very passionate about using fresh quality ingredients, therefore he sources local & organic produce, humanely raised meats, and sustainable wild-caught fish and seafood.
